Compost or Consomme?
Maybe this is why the culinary elite of the world are caravan-ing their way over the Pyrenees, out of France and on to Spain. The Matador of El Bulli is showing us all the way, and “Bronoise” isn’t on the map.

Between this post and the bean recipe, you have emboldened me. Bean foam for dinner at my house tonight! I'll let you know!
Hey like-minder! We use bean foam too, layered between "past-prime" flour tortillas, stacked four high. THEN, we arrange sushi-thin slices of mango (just like you would on a rustic tart) on top, drizzle some chiptle jus over the fruit, and WOW! Drop this dish onto a coffee table as the game kicks off, and just see what happens!
That sounds soooo delicious! We had ours with blue corn chips and a little bit of parmesan. (Would have used cheddar but I didn't feel like running to the store!) Good stuff. I need my energy because today is the day I organize my pin cushion. I have been putting it off, but it needs to be done. The pins and needles are all mixed, which is well and good until I'm reaching for a pin while my eyes are on the TV (I watch "Frasier" reruns while I sew) and I grab a needle by mistake. Anyhow, I'll send you a photo of the result once I'm done!
